Creamy Sausage Pasta

500g conchiglie pasta
2 red onions, diced
4 cloves garlic
2 red bell peppers, chopped
6 vegan sausages, cooked
2 400g tins chopped tomatoes
1 tbsp tomato puree
1 tsp mixed Italian herbs
Salt and pepper, to taste
1 cup cashews, soaked
Basil, for garnish

Method:
Heat olive oil in a pan, add the red onions & cook them until they’ve softened.
Add garlic & stir into the onions.
Add the bell peppers & stir them in as well.
Season with salt, pepper & dried Italian herbs.
Add cooked sausages & stir..
Add the chopped tomatoes & tomato puree & stir until everything is well covered.
Drain the cashews & blend into a cream, then stir it in to the mixture so everything is well mixed together.
Add the cooked pasta & stir, then serve with basil.
