Curry Chickpea Salad Wraps

Wholewheat tortilla wraps

1/3 cup cashews

1 can chickpeas

1 tbsp sesame oil

3 spring onions

1/2 red apple, diced

2 stalks celery, chopped

1 leek, chopped

1 carrot, shredded

4 tbsp vegan mayonnaise

1 tbsp lemon juice

1 tbsp agave or maple syrup

Salt and pepper, to taste

1/2 tsp turmeric

1/2 tsp paprika

1/2 tsp cumin

1/2 tsp spice bag seasoning mix

1/2 tsp mango masala seasoning mix



Method:

  • Toast the cashews in a hot pan over a medium heart for 5 mins.

  • Add the sesame oil and chickpeas, cook for another 2 mins.

  • Add the leek, carrot, and celery and heat through.

  • Take the veg mixture off the heat, then add the remaining ingredients.

  • Mix through well and serve in a warmed tortilla wrap.
