Green Garlicky Pasta

1 bulb garlic – top sliced off
1 1/2 cups cashews (boiled for 15+ mins)
1 1/2 cups vegetable broth
1 cup spinach
1 bunch parsley
juice from 1/2 lemon
1 tsp salt
1/2 tsp pepper
400g pasta

Method:
Preheat oven to 200ºC.
Roast the garlic bulb for 40 minutes.
Meanwhile, cook the pasta.
Add the rest of the ingredients to a blender, along with the roasted garlic, and blend into a smooth sauce.
Toss the sauce with the cooked pasta and serve.
