Peanut Fried Rice

1 onion

2 cloves garlic

Thumbsize piece of ginger

2 carrots

1 bell pepper

350 g cooked rice

1 heaped Tbsp peanut butter

1 Tbsp light soy sauce

1 Tbsp vinegar

1 Tsp hoisin sauce

1 Tsp chilli sauce

A little water to thin

Squeeze of lime

Crushed peanuts



Method:

  • Fry the onion, garlic, and ginger in some oil for 3-4 mins.

  • Add the carrots and pepper and fry until softened.

  • Stir in the cooked rice, then mix in the sauce ingredients.

  • Serve with crushed peanuts and a squeeze of lime.
