Sweet Potato & Lentil Stew

1 white onion, finely chopped

2 cloves garlic, minced

2 sweet potatoes, peeled and cubed

150g dried lentils

2 x tins chopped tomatoes

100g quinoa

200g spinach

3 tbsp rose harissa

3 tbsp tahini

Olive oil

Salt & pepper



Method:

  • Place a large pan over a medium/high heat and add a drizzle of oil. Allow to heat, then add the onion, a dash of salt and pepper, and cook until translucent.

  • Add the sweet potato, lentils, tinned tomatoes, and quinoa. Fill each tin with water and pour this into the pan, then bring to a gentle simmer and allow to bubble to 25 mins, adding the spinach a few minutes before the end of cooking.

  • Stir through the harissa and tahini, then adjust seasoning as required and serve!
