Sweet Potato & Lentil Stew

1 white onion, finely chopped
2 cloves garlic, minced
2 sweet potatoes, peeled and cubed
150g dried lentils
2 x tins chopped tomatoes
100g quinoa
200g spinach
3 tbsp rose harissa
3 tbsp tahini
Olive oil
Salt & pepper

Method:
Place a large pan over a medium/high heat and add a drizzle of oil. Allow to heat, then add the onion, a dash of salt and pepper, and cook until translucent.
Add the sweet potato, lentils, tinned tomatoes, and quinoa. Fill each tin with water and pour this into the pan, then bring to a gentle simmer and allow to bubble to 25 mins, adding the spinach a few minutes before the end of cooking.
Stir through the harissa and tahini, then adjust seasoning as required and serve!
