Zucchini and Potato Casserole

makes 2 servings

2 medium zucchini, quartered and cut into large pieces

3 large potatoes, peeled and cut into large chunks

1/2 medium green or red bell pepper, seeded and chopped

2 cloves garlic, crushed or finely minced

1/2 cup dry bread crumbs

chilli powder, to taste

seasoned salt and pepper, to taste

paprika, to taste

1/4 cup olive oil


Method

  • Preheat oven to 200ºC.

  • In a large casserole dish, thoroughly mix together all the ingredients.

  • Place in preheated oven.

  • After 30 minutes, mix it and let bake for another 30-40 minutes.


Keep an eye on it to prevent burning.
