Oaty Cinnamon Cookies

145 g light brown sugar
115 g vegan butter
25 g granulated sugar
30g dairy-free milk
1 tsp vanilla extract
95 g plain flour
1 tsp ground cinnamon
½ tsp baking soda
Pinch of salt
180 g oats

Method:
Preheat the oven to 180°C
Add the butter and sugars to a large mixing bowl and whisk until fluffy and well combined.
Add the vanilla extract and whisk until just combined.
Add the flour, cinnamon, baking soda and salt then mix until well combined.
Add the oats and mix until just combined. If the mixture is dry, add an extra 1-2 tablespoons of milk and mix until combined.
Divide the cookie dough into 15 balls (around 40 g each) and arrange the balls on your lined baking sheets, leaving around 2" between them.
Bake for 12-15 mins and allow to cool.
