Fudgey Brownie Bites

1 avocado

1/2 cup coconut oil, plus 1/4 cup for frosting

1/4 cup cacao powder, plus 2 tbsp for frosting

1 scoop (44g) protein powder of choice

liquid stevia, or sweetener of choice, to taste



Method:

  • In a blender or food processor, blend 1/2 cup coconut oil and the avocado until smooth and lump-free.

  • Transfer this mixture to a bowl, and stir in the scoop of protein powder and the 1/4 cup of cacao powder.

  • You may have to mix it with your hands, and then knead it a bit.

  • Taste the dough, and adjust the sweetness level to your liking.

  • Press the "dough" into a pan. I used a 9x4" loaf pan.

  • Melt together the 1/4 cup of coconut oil and 2 tbsp cocoa powder.

  • Add stevia/powdered erythritol to your liking.

  • Pour this over the dough in the pan, and freeze for about 15 minutes, until the glaze has set.

  • Remove the pan from the freezer, carefully run a knife around the edges and pop the whole thing out.

  • Cut into ten pieces, and enjoy!
