Gooey Bread and Butter Pudding

makes 4-6 servings

1 baguette

Dairy-free butter

60g pecans

60g raisins

3 tbsp maple syrup

3 tbsp caster sugar

1 tbsp vanilla bean paste

1/4 tsp nutmeg

1.2 tsp cinnamon

200 ml soy cream



Method:

  • Preheat the oven to 180ºC.

  • Slice and butter the baguette and arrange in a baking tray.

  • Top with pecans and raisinsIn a frying pan, mix together the maple syrup, caster sugar, vanilla bean paste, and spices, before adding the soy cream and allowing to simmer until it thickens.

  • Pour the sauce over the baguette in the baking tray, and bake for 30-35 mins.
