Gooey Bread and Butter Pudding

makes 4-6 servings
1 baguette
Dairy-free butter
60g pecans
60g raisins
3 tbsp maple syrup
3 tbsp caster sugar
1 tbsp vanilla bean paste
1/4 tsp nutmeg
1.2 tsp cinnamon
200 ml soy cream

Method:
Preheat the oven to 180ºC.
Slice and butter the baguette and arrange in a baking tray.
Top with pecans and raisinsIn a frying pan, mix together the maple syrup, caster sugar, vanilla bean paste, and spices, before adding the soy cream and allowing to simmer until it thickens.
Pour the sauce over the baguette in the baking tray, and bake for 30-35 mins.
