Lemon and Coconut Cookies

makes ~25 cookies

2 cups unsweetened desiccated coconut

1 cup ground almonds

4 tbsp coconut oil

4 tbsp honey/maple syrup

zest and juice of 1 lemon

1 tsp vanilla extract

pinch sea salt



Method:

  • Preheat oven to 160ºC, and line 2 baking trays.

  • Add all ingredients to a food processor and blend until it comes together.

  • Form into small balls with your hands, place on baking sheet, and flatten slightly.

  • Bake for 10-12 minutes, or until golden at the edges.
