Peanut Butter Bars

makes ~15 bars

1 1/2 cups unsalted peanut butter

1 cup coconut butter*

3-4 tbsp maple syrup

1 1/2 cups dark chocolate

2 tbsp dairy-free milk

Pinch sea salt (optional)



Method

  • In a saucepan , on medium heat, combine the peanut butter, coconut butter and maple syrup.

  • Stir only until everything is combined.

  • Line an 8x8 baking dish with parchment paper.

  • Pour the mixture into the pan.

  • Place in the fridge for about 30 minutes.

  • Melt the chocolate chips and milk.

  • Once melted, pour over the peanut butter layer.

  • Sprinkle with sea salt if desired.

  • Let chill for another 30 minutes.

  • Cut into squares.

  • Coconut butter can be made by blending an equal amount of desiccated coconut with a dash of vanilla essence and a small volume of melted coconut oil
