Peanut Butter Bars

makes ~15 bars
1 1/2 cups unsalted peanut butter
1 cup coconut butter*
3-4 tbsp maple syrup
1 1/2 cups dark chocolate
2 tbsp dairy-free milk
Pinch sea salt (optional)

Method
In a saucepan , on medium heat, combine the peanut butter, coconut butter and maple syrup.
Stir only until everything is combined.
Line an 8x8 baking dish with parchment paper.
Pour the mixture into the pan.
Place in the fridge for about 30 minutes.
Melt the chocolate chips and milk.
Once melted, pour over the peanut butter layer.
Sprinkle with sea salt if desired.
Let chill for another 30 minutes.
Cut into squares.
Coconut butter can be made by blending an equal amount of desiccated coconut with a dash of vanilla essence and a small volume of melted coconut oil
