Peanut Butter Cookie Sandwiches

Cookies:

3/4 cup peanut butter

4 tbsp sugar free syrup

3 tbsp coconut flour (plus more as needed to thicken)

Filling:

1/3 cup almond cream cheese (sub with boiled and blended cashews)

2 tbsp sugar free sweetener

2 tbsp peanut butter



Method:

  • Mix all the cookie ingredients together.

  • If cookie dough is too liquid add more coconut flour.

  • Roll into balls and place on a baking sheet. Press down with a fork.

  • Bake at 150ºC for 12 minutes, then let cool completely.

  • With a fork cream the sweetener and peanut butter with almond cream cheese.

  • Pipe into cooled cookies and serve.
